Alexia's Dad has been busy in the kitchen again! Here's what he's cooked up this week...

1 stock cube of your choice

1 small onion

2 medium leeks

1 medium carrot

500g fresh peas (or frozen)

half a tin of chopped tomatoes

1 thick slice of cooked ham (diced)

4 eggs

preheat oven to 180º

Dice the leeks, carrot and onion and then fry in 2 spoons of olive oil for 7 to 8 minutes on a gentle heat.
Add the tomatoes, peas and ham.

Add 3/4 of a stock cube- (Massimo used a knowles beef one) to a cup of boiling water.
Add this to the mixture in the pan and cover while boiling.

To one side, hard boil 4 eggs.

Cook the pea and ham mixture in the oven for 15- 20 minutes.

Slice the boiled eggs in half length-ways and lay them on top of the mash up when it is out of the oven.

Have a fabulous weekend!
