Recipe of the week

Mega muffin apple cake

Alexia's Dad Massimo has been busy baking today! We thought we would share one of his recipes with you!

250g all purpose flour

120g sugar

pinch of salt

2 tsp baking powder

2 tsp cinnamon

2 eggs

milk (enough to hold the mix together)

20g melted butter

150 g raisins

8 pink lady apples

a small amount of water and rum mixed together (enough to cover the raisins)

Preheat the oven to 180º

You will need a cake tin with a removable bottom. Line the bottom with baking paper and grease the edges.

In a small dish place the raisins and cover with a mixture of rum and water, leave them to soak for 30 minutes.

Sieve the flour, salt, baking power and cinnamon into a large mixing bowl. Mix in the melted butter and eggs and then add enough milk to ensure the mixture can drop off the spoon.

Peel the 8 apples (the more the better), slice 7 and grate 1  and add these to the mixture.

Mix in the raisins.

Pour the cake mix into the tin, sprinkle a little sugar on top before baking.

Bake in the oven for 45-60 minutes depending on oven.

Once done, go around the edges of the cake with a knife, leave for 5 minutes and remove from the tin.

Best served with ice cream.

Have a fabulous weekend!
